Fruit roll ups!
I made fruit leather the other day because I had leftover peaches. It was so EASY! I peeled and pureed peaches in the blender. I added some honey because my peaches were a little tart. Cooked the mixture to 160 degrees and spread it onto cookie sheets lined with plastic and a teensy bit of cooking spray. I set them out in the sun all day with 2 window screens over the cookie sheets to prevent birds and lizards from eating them. Twelve hours later, I had peach fruit roll ups! I cut the plastic and rolled them up becuase I like the whole roll-up concept. I ended up with 8 fruit roll ups! I think strawberry or apricot would be really yummy! Tip: It needs to be over 85 degrees and less than 60% humidity to dry fruit leather. It was fun too!
